Butterscotch has recently become one of my new favorite flavors!! Why not incorporate it into some heavenly pumpkin cheesecake 😍 These PUMPKIN BUTTERSCOTCH CHEESECAKE BARS 🎃🍯 are so amazing! A smooth cream cheese filling sits on top of a delicious oat flour and date crust. Top it with some whipped cream and even better! Recipe down below⬇️

Pumpkin Butterscotch Cheesecake:

Crust:
– 10 pitted dates
– 1 teaspoon maple syrup
– 1 teaspoon water
– 1/2 teaspoon vanilla extract
– 1 cup oat flour
Filling:
– 8 oz regular cream cheese
– 1/2 cup pumpkin purée
– 1 cup whipped cream
– 1 teaspoon vanilla extract
– 1 teaspoon honey
– 1 teaspoon pumpkin pie spice
– 1/2 teaspoon cinnamon
– 1/4 cup melted butterscotch chips
Soak the dates in hot water for 5 minutes to soften them. Mash the dates and add in the rest of the ingredients for the crust. Press the crust into an 8×8 square pan. Mix together the ingredients for the filling and pour over the crust. Freeze for an hour or until solid. Thaw for 5 minutes before serving. Keep frozen. Enjoy!!😋
