Fun fact It’s Taco Tuesday… AGAIN!!! 🌮🌮🌮 Fun fact I’m not really a big fan of very spicy food, but mild I can do.
I really, really love the flavor of a mild curry, so I decided to make these CURRY SHRIMP TACOS WITH PLANTAINS AND MANGO SLAW 🌮🍤🍌🥭 The savory taste of mild curry blends exceptionally well with sweet mango and plantain, and the Greek yogurt base. These tacos are truly a flavor combo to reckon with 😋 Recipe down below⬇️

Curry shrimp tacos with plantains and mango slaw:
– Tortillas
Mango slaw:
– 1 cup diced mango
– 3/4 cup diced tomato
– 1 cup chopped purple cabbage
– 1/2 cup chopped green onion
– 2 large minced garlic cloves
– 1/2 cup cilantro leaves
– Juice of 1/2 lime
– 1/4 teaspoon salt
– 1/4 teaspoon black pepper
– 1/4 teaspoon dried basil
– 1/4 teaspoon dried oregano
– Dash or two of paprika
Shrimp curry:
– 2 lbs. raw shrimp
– 2 teaspoons olive oil
– 1/2 tablespoon curry powder
– 1/4 teaspoon ground ginger
– 1 cup diced red onion
– 3 minced garlic cloves
– 1/4 teaspoon paprika
– 1/4 teaspoon salt
– Juice of 1/2 lime
– 2 teaspoons honey
– 2 tablespoons almond milk
– 2 ripe plantains sliced
Add on:
– Nonfat plain Greek yogurt
– Parsley

Mix all the ingredients for the mango slaw and refrigerate. Heat the oil in a large pan on the stove on medium heat. Sauté the garlic and red onion. Cook the shrimp evenly on each side and add all seasoning. Add sliced plantains to the shrimp pan and stir in the milk. Allow to simmer until the plantains are cooked. Use tortilla of choice and spread on the Greek yogurt. Scoop some mango slaw onto the tortilla and then the shrimp and plantains. Garnish with parsley and enjoy!
