Happy Friday!! Here’s another amazing fall dessert for your feed! Love these PUMPKIN PURPLE SWEET POTATO WOOPIE PIES 🧡💜 The highly nutritious purple sweet potato pairs perfectly with the classic flavor of pumpkin and cream cheese!! The color combo is really one of a kind and they taste even more incredible! Recipe down below⬇️

Pumpkin Woopie Pies:
– 1/3 cup pumpkin purée
– 2 tablespoons nonfat plain Greek yogurt
– 2 tablespoons pure maple syrup
– 1 teaspoon vanilla extract
– 1 teaspoon cinnamon
– 1 teaspoon pumpkin pie spice
– 1/4 teaspoon salt
– 1 teaspoon apple cider vinegar
– 1 teaspoon baking powder
– 1 teaspoon baking soda
– 1/3 cup almond milk
– 1/2 cup all purpose flour
Purple Sweet Potato Cream Cheese Frosting:
– 1/3 less fat cream cheese
– Vanilla extract
– Cinnamon
– Mashed purple sweet potato
– Powdered sugar
Preheat the oven to 350 °F. Mix the ingredients for the woopie pies in a bowl and line a baking pan with parchment paper. Scoop the batter onto the parchment paper and spread the batter into evenly shaped circles (makes 6 circles). Bake for 10 minutes. Allow to cool completely. Make the frosting, leaving half as plain cream cheese frosting and adding mashed purple sweet potato to the rest. In a piping bag, add the frosting by alternating purple and white frosting. Pipe the frosting onto one side of a pie and then place a second pie on top to make a sandwich. Keep refrigerated. Enjoy!!😋
