Happy Friday!! Remember when I mentioned that another cinnamon roll post was coming soon? Well, here it is!!! 😉 Swipe for the process!😍 These BLUEBERRY ORANGE PISTACHIO CINNAMON ROLLS 💙🍊💚are among my favorites that I’ve made so far! This recipe is such a great combination of flavors and texture, and these cinnamon rolls literally turned out perfect! Recipe down below⬇️

Blueberry Orange Pistachio Cinnamon Rolls:

Dough:
– 1/4 cup olive oil
– 1/2 cup nonfat plain Greek yogurt
– 1 teaspoon vanilla extract
– 1/4 teaspoon salt
– 1 teaspoon baking soda
– 2 teaspoons baking powder
– 2 teaspoons maple syrup or honey
– 2 tablespoons apple cider vinegar
– 2 1/4 cups flour (more for dusting)
Filling:
– 1 1/2 cups frozen blueberries
– 1 teaspoon vanilla extract
– 1 tablespoon cornstarch in 1/4 cup water
– Zest of 1 orange
– Juice of 1 orange
– 1 teaspoon cinnamon
Glaze:
– 1 tablespoon melted white chocolate
– 1/2 teaspoon melted coconut oil
– 1/4 teaspoon cinnamon
– 2 tablespoons orange juice
– 1/2 cup powdered sugar
Topping:
– Crushed lightly salted pistachios

Preheat the oven to 425 °F. Mix together the ingredients for the dough in a large bowl and knead the dough for 1 minute. Add more flour if it’s too sticky. Sprinkle flour on a clean countertop and place the dough on the floured surface. Roll flat with a rolling pin until about 1 cm thick. To make the filling, heat a pot on the stove on medium heat and stir together all the ingredients. Allow the mixture to bubble and thicken. Spread the filling over the flattened dough. Roll up the dough tightly and cut into 1 1/2 inch pieces. Place in a greased round cake pan or pie dish, allowing some spacing between the rolls for the dough to expand when baking. Bake for 18 minutes. Make the glaze and drizzle over the rolls. Top with crushed pistachios and enjoy!😋
