Happy Funfetti Friday!!!🎉 These past few weeks, I’ve really been on a roll making different kinds of cinnamon rolls from scratch (I can literally make these with my eyes closed – more coming soon😉)! They’re one of my new favorite treats to make and to eat! I recently made these FUNFETTI CHOCOLATE CHUNK CINNAMON ROLLS 🥳🍫 and let me tell you, they’re absolutely fantastic! They don’t require any yeast and they’re pretty quick to make once you get the hang of it. I’m so excited to share this recipe with you! Recipe down below⬇️

Funfetti Chocolate Chunk Cinnamon Rolls:

– 1/4 cup olive oil
– 3/4 cup nonfat plain Greek yogurt
– 1 teaspoon vanilla extract
– 1/4 teaspoon salt
– 1 teaspoon baking soda
– 2 teaspoons baking powder
– 2 teaspoons maple syrup
– 2 tablespoons apple cider vinegar
– 2 1/2 cups all purpose flour (more for dusting)
– 1/3 cup rainbow sprinkles
– 1/2 cup dark chocolate chunks
– 1/4 cup pure maple syrup with 1 teaspoon cinnamon
– 1/4 cup rainbow chocolate chips
– 1 teaspoon melted coconut oil
– 1 tablespoon melted white chocolate
– 1 teaspoon almond milk
– 1/2 cup powdered sugar
– Mini chocolate chips
– Rainbow sprinkles
Preheat the oven to 425 °F. Mix together the ingredients for the dough in a large bowl and knead the dough for 1 minute. Add more flour if it’s too sticky. Sprinkle flour on a clean countertop and place the dough on the flour. Roll flat with a rolling pin until about 1 cm thick. Spread the maple syrup/cinnamon mixture over the dough, and then add the chocolate and sprinkles. Roll up the dough tightly and cut into 1 1/2 inch pieces. Place in a greased round cake pan, allowing some spacing between the rolls for the dough to expand when baking. Bake for 18 minutes. Make the glaze and pour/drizzle over the rolls. Add more chocolate and sprinkles on top and enjoy!
