Happy Mango Monday!!! I am so happy with how these MANGO UBE CUSTARD BARS 🥭💜🥥 turned out! Ube, aka purple yam/sweet potato, is high in potassium, antioxidants, and many vitamins. It is a staple in the Philippines, where my mom grew up, and is used in many Filipino desserts. My grandpa loves desserts as much as I do, so he loves to buy us various desserts to try from the Filipino store near his home. These mango ube custard bars remind me a lot of those yummy desserts 😋 and how much I love my grandpa and family ❤️
This dessert consists of an ube custard layer and a mango layer, topped with shredded coconut. I used flour, mashed ube, egg, almond milk, coconut oil, and white chocolate chips for the ube custard layer. I made the mango layer using freshly puréed mango and cornstarch.
