Happy Sunday!! Today is move-in day for my Spring semester, and classes start back up tomorrow! Excited to learn a lot and get even closer to becoming a registered nurse! With that being said, here’s by BLACKBERRY MANGO CRUMBLE BARS πŸ’œπŸ₯­ for your Sunday feed!! They’re such a delicious snack to enjoy at any time of the day! Recipe down below⬇️

Blackberry Mango Crumble Bars:
Base:
– 1/4 cup olive oil
– 2 teaspoons pure maple syrup
– 1/4 teaspoons salt
– 2 tablespoons organic soy milk
– 1 cup all-purpose flour
Filling:
– 1 1/2 cups diced mango
– 1/2 cup blackberries
– 1/2 teaspoon vanilla extract
– 1 cup water with 3 tablespoons cornstarch
Crumble:
– 1/2 cup oats
– 2 teaspoons olive oil
– 1/4 cup all-purpose flour
– 2 teaspoons maple syrup
– 1/4 teaspoon cinnamon
Topping:
– White chocolate drizzle
Preheat the oven to 350Β° F. Mix together all the ingredients for the base and press the dough into an 8×8 square baking pan lined with parchment paper. Bake for 10 minutes. Mix together the ingredients for the filling and stir until it becomes thick. Spread the filling over the base. Make the crumble and sprinkle over the filling. Bake for 20 more minutes. Allow to cool and drizzle with white chocolate. Keep refrigerated. Enjoy!!πŸ˜‹
