Happy Super Salad Saturday! This LEMON BASIL QUINOA SALAD ๐Ÿ‹๐Ÿฅฌ๐Ÿ…๐ŸŒฝ is super fantastic after a long run or an intense workout. The quinoa makes this salad a perfect recovery meal or side dish because it is a plant-based complete protein, providing all 9 essential amino acids. Lemon basil quinoa salad:
– 2 cups uncooked, rinsed quinoa
– 3 cups water
– Juice of 1 lemon
– 1/2 cup chopped fresh basil leaves (or 2 teaspoons dried basil)
– 1/2 cup diced red onion
– 1/4 cup chopped green onion
– 2 minced garlic cloves
– 1/2 teaspoon salt
– 1/4 teaspoon black pepper
– 1 cup halved grape tomatoes
– 3/4 cups corn
– 1 cup mozzarella cheese pearls
Heat a large pot on the stove on medium heat. Pour in the uncooked quinoa, water, basil, garlic, onion, and all seasoning. Allow to boil until quinoa is fully cooked, stirring frequently. Once cooked, allow to cool, then squeeze in juice from one lemon. Finally, add in the tomato, corn, and mozzarella, and refrigerate. Serve cold. Enjoy!
