Healthy brownies for breakfast sound pretty amazing to me! These PUMPKIN PROTEIN BROWNIES ๐ŸŽƒ๐Ÿซ might be one of the best treats Iโ€™ve ever made! My family is ecstatic every time I make these!! These brownies are flourless, eggless, dairy-free, and packed with protein and nutrients! Oh and yes… they are topped with homemade chocolate fudge frosting and chocolate chips, of course! ๐Ÿ˜‰ Recipe down below โฌ‡๏ธ

Pumpkin Protein Brownies:

Brownie:
– 1 1/2 cups pumpkin pureฬe
– 1/2 cup natural almond butter
– 1 teaspoon vanilla extract
– 1/2 cup 100% cocoa powder
– 1/4 teaspoon salt
– 2 tablespoons maple syrup or honey
– 1/2 cup chocolate whey protein powder
Chocolate fudge frosting:
– 2 tablespoons melted coconut oil
– 1/4 cup melted dark chocolate
– 1/2 teaspoon vanilla extract
– 1/4 cup 100% cocoa powder
– 1/2 cup powdered sugar
– 4 teaspoons almond milk
Topping:
– Mini chocolate chips
Preheat oven to 350 ยฐF. Mix together all the ingredients for the brownie in a bowl. Scoop and spread the batter into an 8×8 square baking pan lined with parchment paper. Bake for 30 minutes and allow to cool. For the fudge frosting, mix together the ingredients in a bowl and spread over the brownie layer. Top with chocolate chips and refrigerate for 2 hours.
