Here’s a delicious twist to lemon bars that’s loaded with healthy goodness! These PAPAYA LEMON BARS 🧡🍋 are such a unique combination of flavors that work exceptionally well together! Try for yourself!! Recipe down below⬇️

Papaya Lemon Bars:

Crust:
– 1/4 cup olive oil
– 1 egg
– 3 tablespoons water
– 1 teaspoon vanilla extract
– 1/4 teaspoon almond extract
– 2 tablespoons maple syrup
– 1/2 teaspoon cinnamon
– 1/4 teaspoon salt
– 1 1/4 cups all-purpose flour
Filling:
– Zest & juice of 1 lemon
– 3/4 cup diced fresh papaya
– 1/4 cup honey or maple syrup
– 1/4 teaspoon salt
– 1 teaspoon vanilla extract
– 3 eggs
– 1 tablespoon all-purpose flour
Preheat the oven to 325 °F. Mix together all the ingredients for the crust in a bowl. Line an 8×8 square baking pan with parchment paper and press the dough into the pan. Bake for 15 minutes. Put all the ingredients for the filling in a blender and blend until smooth. Pour over the crust and bake for 40 minutes. Allow to cool and refrigerate for 1 hour. Enjoy😋
