The filling has no added sugar and these cookies are made with all-natural ingredients!! Recipe down below⬇️

Blackberry Pistachio Thumbprint Cookies:

Dough:
– 2 teaspoons olive oil
– 1 teaspoon vanilla extract
– 1/4 cup almond milk
– 2 teaspoons pure maple syrup
– 2 teaspoons organic milled flax seeds
– 1/2 teaspoon all-spice
– 1 cup almond flour
– 1/2 cup oat flour
Filling:
– 1 cup fresh blackberries
– 1/2 teaspoon vanilla extract
– 1/2 cup water with 2 tablespoons cornstarch
Coating:
– Crushed salted pistachios
Preheat the oven to 350°F. Mix all the ingredients for the dough in a bowl. Roll the dough into one inch balls and roll each ball in crushed salted pistachios until coated. Place each ball on a baking pan lined with parchment paper and press your thumb into the centers to make an indentation. Bake the cookies for 5 minutes. Simultaneously, add the ingredients for the filling in a pot and allow to simmer on the stove until thick. Make sure to stir the mixture often. Once the texture is jelly-like, scoop the jelly into the indentations on each cookie. Bake for 5 more minutes. Allow to cool and keep refrigerated. Enjoy!!😋
