Blueberry Crumble Bars:

Crust:
– 1/4 cup olive oil
– 1 egg
– 1 teaspoon vanilla extract
– 1/4 teaspoon almond extract
– 2 teaspoons maple syrup
– 1 teaspoon cinnamon
– 1/4 teaspoon salt
– 1 1/4 cups flour
Filling:
– 2 cups frozen blueberries
– 1/2 cup water with 2 tablespoons cornstarch
– 1 teaspoon vanilla extract
Crumble:
– 2 tablespoons olive oil
– 1/2 cup oats
– 1/2 cup flour
– 1/2 teaspoon cinnamon
– 2 tablespoons brown sugar
– 1/2 teaspoon vanilla extract
Drizzle:
– White chocolate
– Coconut oil
Preheat the oven to 325 °F. Mix the ingredients for the crust until a ball of dough forms. Line an 8×8 baking pan with parchment paper and press the dough until evenly distributed. Bake for 15 minutes. Heat a pot on the stove on medium heat and stir together the ingredients for the filling until it becomes thick. Pour the filling over the crust. Make the crumble layer and distribute evenly over the filling. Bake for 20 minutes. Drizzle with melted white chocolate mixed with coconut oil. Refrigerate for 2 hours. Enjoy😋
