Pumpkin pie – The classic Thanksgiving dessert!!! Hereโ€™s my healthier homemade PUMPKIN PIE ๐ŸŽƒ๐Ÿฅง It was lots of fun to make and even more fun to share with my family on Thanksgiving day!! Recipe down belowโฌ‡๏ธ

Pumpkin Pie:

Crust:
– 1 1/4 cups all-purpose flour
– 1/4 cup olive oil
– 1/2 tablespoon honey
– 1/4 teaspoon salt
– 2 1/2 tablespoons almond milk
– 1 teaspoons water
Pumpkin pie filling:
– 3 eggs
– 2 cups pumpkin pureฬe
– 1/2 cup almond milk
– 1/4 teaspoon salt
– 1/2 cup natural maple syrup
– 1 teaspoon vanilla extract
– 1 teaspoon cinnamon
– 1 teaspoon pumpkin pie spice
Preheat the oven to 350 ยฐF. Mix together all the ingredients for the pie crust in a bowl until doughy. Split the dough in half. Place the dough on a clean countertop and roll flat with a rolling pin. Place the flattened pie crust over a greased pie dish and press onto the dish. Trim and pinch the edges of the pie crust. Use the leftover pie crust to cut out leaves. Mix together the ingredients for the filling and pour over the crust. Bake for 50 minutes, adding the leaves half way. Enjoy!!๐Ÿ˜‹
