So excited that it’s pie season and happy to share my love for pecan pie wIth these PECAN PIE BARS 🥧 They’re loaded with the sweet and heavenly flavors of pecans, maple syrup, and cinnamon!! I just can’t get enough of these! Recipe down below⬇️

Pecan Pie Bars:
Crust:
– 2 cups oats
– 2 tablespoons maple syrup
– 1/4 teaspoon salt
– 1 teaspoon vanilla extract
– 2 tablespoons coconut oil
Filling:
– 1 1/2 cups chopped pecans
– 1 teaspoon cinnamon
– 1/4 cup melted coconut oil
– 1 teaspoon vanilla extract
– 1/4 teaspoon salt
– 2 tablespoons maple syrup
– 1/3 cup brown sugar
– 1 egg beaten
Preheat the oven to 350 °F. Blend the oats into oat flour. Mix together the rest of the ingredients for the crust in a bowl. Line an 8×8 square baking pan with parchment paper and press the crust into pan. Bake for 10 minutes. While the crust is baking, heat a pot on the stove on medium heat and put in all filling ingredients. Allow to simmer for 5 minutes. Pour the mixture over the crust and bake for 20 more minutes. Allow to cool and enjoy!!😋
