Sub-freezing weather calls for this PESTO GRILLED CHEESE WITH SWEET POTATO TOMATO SOUP🥪🍠🥫 It’s the perfect meal for a winter day like today! The grilled cheese is made with my homemade pesto (recipe posted on 12/10/20) and mozzarella cheese. Recipe for the soup with homemade croutons down below⬇️

Sweet Potato Tomato Soup:
– 1 1/2 cups cooked sweet potato (peeled and mashed)
– 1/2 cup diced yellow onion
– 1 large garlic clove
– 1 cup fresh diced tomato
– 1/2 teaspoon salt
– 1/4 teaspoon black pepper
– 1/2 teaspoon dried basil
– 1/2 teaspoon dried oregano
– 1/2 teaspoon all-spice
– 1 1/2 cups almond milk
Croutons:
– Bread of choice cut into 1/2 inch cubes
– Olive oil
– Salt
– Black pepper
– Garlic powder
– Onion powder
– Dried basil
Topping:
– Grated Parmesan cheese
– Dried parsley
Put all the ingredients for the soup in a blender and blend until smooth. Pour the mixture into a pot on the stove and allow to simmer on medium heat for about 15 minutes. Keep the lid on but stir occasionally. Add more almond milk if the soup becomes too thick. For the croutons, coat a small pan on the stove with olive oil on medium heat. Once the oil is hot, put the bread cubes on the pan. Allow to sizzle on each side until crispy and add seasoning. To serve, ladle the soup into a bowl and add the croutons and other toppings. Enjoy!!😋
