Sunday Brunch: SALTED CARAMEL PLANTAIN FRENCH TOAST🍌 My roommate and I always look forward to having French toast as our brunch treat almost every weekend while at college. I’ve been really craving French toast, so I decided to jazz up this simple breakfast treat with warm plantain syrup. Plantains are a type of banana; however, they do not taste like bananas and are usually cooked before consumption. They’re lower in sugar, and they’re higher in vitamin A, vitamin C, and potassium. Salted caramel plantain French toast:
French toast:
– 3 slices of sourdough bread
– 2 eggs
– 1/4 cup almond milk
– 1 teaspoon vanilla extract
– 1 teaspoon cinnamon
– 1 tablespoon honey
Plantain topping:
– 1 1/2 semi-ripe plantains sliced
– 1/2 cup water with 1 teaspoon cornstarch
– 1 teaspoon cinnamon
– 2-3 tablespoons brown sugar
– 1/4 teaspoon salt
– 1 teaspoon almond milk
– 1 teaspoon vanilla extract
– Powdered sugar
– Sliced almonds
Spray a large pan with cooking spray and heat on medium heat. Mix the French toast batter and dip each slice of bread on both sides. Put the French toast into the pan and allow to cook on each side for about 3 minutes or until fully cooked. In a small pot, make the syrup by mixing all the ingredients and allow to simmer on medium heat for 10 minutes. Place French toast on plate and top with the plantain syrup. Top with powdered sugar and sliced almonds.
