Sunday Brunch Special: PEACH CRISP PANCAKES ๐Ÿ‘๐Ÿฅž All I have to say is theyโ€™re absolutely incredible๐Ÿ˜‹ Swipe for some action๐Ÿ˜‰ Recipe down belowโฌ‡๏ธ

Peach Crisp Pancakes:
– 1 cup oats
– 1/2 ripe banana
– 1/2 cup all-purpose flour
– 1 tablespoon honey or maple syrup
– 1/2 teaspoon cinnamon
– 1/2 teaspoon vanilla extract
– 1/2 teaspoon baking soda
– 1/2 teaspoon baking powder
– 1/4 cup plain nonfat Greek yogurt
– 1/4 cup almond milk
– 2 teaspoons apple cider vinegar
– 1/2 cup diced peaches
Topping:
– Fresh sliced peaches
– Crisp: 1 tablespoon oats, 2 teaspoons brown sugar, pinch of salt, 1/4 teaspoon cinnamon, 1/2 teaspoon vanilla extract, 2 tablespoons chopped pecans
– Vanilla Greek yogurt sprinkled with cinnamon
– Maple syrup
Put all the ingredients for the pancakes into a blender and blend until smooth. Heat a pan on the stove on medium heat and spray with cooking spray. Pour or scoop the batter onto the pan and allow to cook evenly on both sides. Top the pancakes with sliced peaches, the crisp mixture, and vanilla Greek yogurt sprinkled with cinnamon.
