Tomato, Spinach & Cheese Quiche:

Crust:
– 1 cup all-purpose flour
– 1/4 cup olive oil
– 1 teaspoon honey
– 1/2 teaspoon salt
– 1/4 cup almond milk
Filling:
– 4 eggs
– 1 teaspoon olive oil
– 1/4 cup organic soy milk
– 1 cup diced tomatoes
– 1 cup spinach
– 1/4 cup diced yellow onion
– 2 large garlic cloves minced
– 1/2 cup fresh cilantro leaves
– 1/2 cup shredded mozzarella cheese
– 1/4 cup grated Parmesan cheese
– 1/4 teaspoon black pepper
– 1/4 teaspoon salt
– 1/2 teaspoon dried basil
– 1/2 teaspoon dried oregano
Preheat the oven to 350 Β°F. Mix together all the ingredients for the crust. Press the dough into a greased pie dish. Trim and pinch the edges to look like a pie. Mix together all the ingredients for the filling and pour the mixture over the crust. Bake for 35 minutes. Serve warm and enjoy!!πŸ˜‹
