Ube Strawberry Stuffed French Toast:
– Challah bread, sliced 1-inch thick
Coating:
– 5 eggs
– 1/2 cup almond milk
– 1 teaspoon vanilla extract
– 1 teaspoon pure maple syrup
– 1/2 teaspoon cinnamon
Filling:
– 1/2 cup cream cheese
– 1/4 cup nonfat plain Greek yogurt
– 1 teaspoon vanilla extract
– 1/2 cup mashed purple sweet potato
– 2 teaspoons honey
– 1 1/2 cup diced strawberries
Heat a pan on the stove on medium heat and spray with cooking spray. Mix together all the ingredients for the egg coating in a shallow dish. Mix together all the filling ingredients in a bowl. Cut a horizontal slit on the bottom of each challah bread to make a pocket. Use a piping/icing bag to squeeze the filling into the pocket. Dip the filled bread in the egg mixture to coat both sides. Place the dipped bread in the pan and cook evenly on both sides. Enjoy the French Toast with more filling, fresh strawberries, and maple syrup!!😋
