These CHERRY CHOCOLATE ALMOND CRUMBLE BARS 🍒🍫 are probably one of my favorite desserts I’ve made all summer! This sweet treat steals the show with its homemade shortbread crust, gooey cherry filling, topped with a crunchy crumble layer with almonds and chocolate chips, and of course, a white chocolate drizzle. The cherry filling, with its natural sweetness, has no added sugar. They’re definitely a flavor combo I would highly recommend, and they’re a perfect summer treat! Recipe down below⬇️
Cherry chocolate almond crumble bars:
Crust:
– 1/4 cup olive oil
– 2 eggs
– 1/4 cup water
– 1 tablespoon vanilla extract
– 1/2 teaspoon almond extract
– 2 tablespoons natural maple syrup
– 1 teaspoon cinnamon
– 1/4 teaspoon salt
– 2 1/2 cup flour
Cherry filling:
– 2 1/2 cups frozen pitted cherries
– 1 teaspoon vanilla extract
– 1/2 cup water with 2 tablespoons cornstarch
Crumble:
– 1/4 cup olive oil
– 1/2 cup oats
– 1/4 cup flour
– 1/4 cup plain sliced almonds
– 1/4 teaspoon almond extract
– 1 teaspoon cinnamon
– 1/4 cup brown sugar
– 1/4 cup mini chocolate chips
Drizzle:
– melted white chocolate
Preheat the oven to 325 degrees F. In a large bowl mix together the crust ingredients until a ball of dough forms. Line an 8×8 baking pan with parchment paper and press the dough into the pan until evenly distributed. Bake for 20 minutes. Heat a pot on the stove on medium heat and add in the filling ingredients. Allow the mixture to boil until the cherries begin the break down (about 20 minutes). Keep the lid on and stir occasionally. Once the cherries are cooked, pour them over the crust. Make the crumble layer and evenly distribute over the filling. Bake again for 20 minutes. Allow to cool and drizzle melted white chocolate on top. Refrigerate for 1 hour.
