This extraordinary idea of tropical muffins just popped into my head one day, and I couldn’t be happier with how they turned out!! These BANANA PITAYA MUFFINS WITH MANGO KIWI GLAZE 🍌💗🥭🥝🥥 are nothing like I’ve ever tasted before! It’s such an amazing combination of tropical flavors. They’re healthy with no added sugar, and they look beautiful too! Recipe down below⬇️

Banana Pitaya Muffins With Mango Kiwi Glaze:

Batter:
– 2 large ripe bananas
– 2 teaspoons olive oil
– 1/2 cup frozen pitaya chunks (slightly thawed)
– 1 teaspoon vanilla extract
– 1/2 cup almond milk
– 1 tablespoon organic milled flax seeds
– 1/4 teaspoon salt
– 1 teaspoon baking soda
– 2 teaspoons baking powder
– 2 teaspoons apple cider vinegar
– 1 1/2 cups all-purpose flour
Glaze:
– 1 cup diced mango
– 1/2 cup diced kiwi
– 1/2 teaspoon vanilla extract
– 1/4 cup water with 1 tablespoon cornstarch
– Pinch of salt
Topping:
– Shredded unsweetened coconut
Preheat the oven to 350 °F. Put the ingredients for the batter in a blender and blend until smooth. Line a muffin tin with cupcake holders and scoop the batter in, about 3/4 full. Bake for 25 minutes. While the muffins are baking, make the glaze. Blend together the mango and kiwi until smooth. Heat a pot on the stove on medium heat. Pour in the mango/kiwi mixture and add in the rest of the ingredients. Allow to bubble and cook until thick. When the muffins are done, top with as much glaze as desired and add on some shredded coconut. Enjoy!!😍😋
