Who doesn’t love a good peanut butter and jelly sandwich?! I decided to transform your ordinary peanut butter and jelly into these PB & J THUMBPRINT OATMEAL COOKIES 🥜🍓 They’re all natural with no added sugar and they literally taste like peanut butter and jelly (or better)! They’re a great snack any time of the day! 😋

PB & J Thumbprint Oatmeal Cookies:
– 3 ripe bananas
– 1/2 cup natural peanut butter
– 1 teaspoon cinnamon
– 1 teaspoon vanilla extract
– 2 cups oats
Strawberry Chia Seed Jam:
– 1 cup sliced strawberries
– 2 teaspoons cornstarch mixed with 1/4 cup water
– 1/4 cup chia seeds
Preheat oven to 350 degrees F. Mash the ripe bananas and mix the rest of the cookie ingredients together. Line a baking tray with parchment paper and spoon cookie mixture in clumps onto the tray. Push your thumb into each one to make an indentation. Bake for 12 minutes. While cookies are baking, cook strawberries on medium heat and add water/cornstarch mixture. Keep lid on and allow to simmer for 15 minutes, mixing frequently. Allow jam to cool slightly and add chia seeds. Mix chia seeds into jam and allow to sit for 10 minutes. Spoon the jam onto each cookie. Drizzle peanut butter on top. Keep refrigerated.
